Recipe: Homemade vanilla-caramel ice cream without an ice cream maker
I
learned this recipe from an Instagrammer, but with my own twist.

For this recipe we will need a mixer or a kneader; and
with the latter the volume will be doubled, so for those who have the mixer,
they will need half measures of these ingredients.
You can
obviously change the flavor, like banana-caramel or chocolate flavor...
To get a good result, put the bowl and the whisk in
the freezer before starting the preparation (15 min, minimum), let's see the
following:
Ingredients for a 5 kg mixing bowl :
· ½ liter of fresh milk;
· 2 pots of caramel-flavored yogurt (fresh,
of course);
· 150 g (1 glass) of whipped cream powder;
· 100g of vanilla-flavored custard powder.
Optional :
my personal touch:
· 100g of sugar
· 50g of roasted, unpeeled peanuts – or
almonds
Preparation:
· Take the bowl and whisk out of the
freezer and place them in the mixer;
· In the bowl, put the yogurts, the milk,
the whipped cream powder then the custard powder;
· Start the whisk at low speed then at
maximum speed, and let it rise:
it will take – minimum – two (2) minutes.
Optional Addition:
· In a non-stick pan, put the sugar and let
it melt over low heat;
· Once the sugar is caramelized, add the
whole peanuts on top: mix;
· Pour this hot mixture onto marble or a
silicone mat: try to spread it out;
· Let it harden;
· Grind to add this crunchy powder to our
preparation (in the mixer bowl): coat.
· Place directly into ramekins
(freezer-safe) or in a box.
· Place in the freezer for at least 6 hours
before serving.
You can obviously change the flavor, like
banana-caramel or chocolate flavor...
