Gluten-free cookies: cornstarch, “lemon” flavor
I learned this recipe from my sister-in-law
" Ahlam ", but with personal touches, given that
"cooking" is an art and not an exact science, and that's what makes
diversification.
These cookies, in this recipe, have the flavor
of lemon, but everyone has their taste, namely, vanilla, orange…
Note that these biscuits have a delicate
appearance and break easily; Very light little biscuits, without flour, without
semolina; with cornstarch, appreciated by people with celiac disease, as well
as for those who follow a “gluten-free” diet, knowing that you can very well
take pleasure in eating healthily.
Let's see the recipe together:
Recipe:
Ingredients: for approximately 32 cookies:
· 125g of margarine at room temperature;
· 60g of sugar;
· 1 packet of baking powder;
· 1 tablespoon of lemon juice;
· Lemon zest ;
· 2 egg yolks (the whites can be stored in
an airtight container in the freezer, or used the same day in other
preparations) ;
· 1 pinch of salt ;
· Cornstarch (approximately 250g);
· Chocolate to decorate, or jam, dried fruits…
Preparation:
· In a salad bowl, put the margarine and sugar:
mix (by hand, with a spoon or with the paddle if you are using the dough
mixer);
· Add the lemon juice and zest and salt: mix;
· Incorporate the egg yolks then the yeast;
· Mix with the cornstarch until you obtain a nice
firm dough: leave to rest in the fridge for – maximum – half an hour (30
minutes);
· Form balls, the size of a walnut, which you
place in a floured mold or lined with (sulfurized) baking paper;
· Bake in an oven preheated to 180° for twenty
(20) minutes: monitor the cooking, until you obtain a slightly golden color;
· Leave to cool before decorating.
You can add raisins or chocolate chips to the
dough, and our airy textured cookies will already be garnished...
