this recipe from a friend, but with personal touches.
"Petits fours" are a kind
of fine pastry of
small size. In North African countries, especially in Algeria, "dry
cakes" are always present in the family, not only at traditional or
religious festivals (Aid, weddings, engagements, circumcision, etc.), but also
at snack time or at breakfast. .
Also, in Algeria, if a lady is invited
to have coffee with her friend or a member of her family, she brings with her a
tray (or a plate) of petit fours.
In this article, our “petits fours” are
made with "custard powder". Composed of a thickener, cornstarch
and vanilla, chocolate flavoring, … Custard powder (or cream
powder) is a professional product used to make pastry creams in particular, and
the idea of adding this powder to small ovens is reputed; let's see this
recipe together.
Recipe :
Ingredients :
· 2 eggs ;
· 100g of sugar (or a little less);
· 3 tablespoons flan powder: vanilla, banana or
caramel flavor;
· 100g of grated coconut, or almond;
· 50g butter (or margarine) softened;
· 3 tablespoons of oil;
· 1 serving of cheese or 1 tablespoon of melted
cheese;
· Lemon zest ;
· 1 packet of baking powder;
· Flour.
Preparation:
· Turn on the oven at 180°;
· In a salad bowl, put the sugar, flan powder,
grated coconut and lemon zest: mix (you can wait a moment before continuing);
· Add the eggs, butter, oil and cheese: mix –
preferably – with an electric mixer;
· Incorporate the baking powder then little by
little the flour to have a paste.
· Form balls that you place on a floured tray: you
can use silicone molds;
· Bake for 20 minutes.
· Decorate your way.
These dry cakes or petit fours come with
a tea or a coffee …
And enjoy your meal.
